Pressure Cooker Heaven

Ben & I got a pressure cooker for christmas this year – and we’re in love. I never imagined that a quick meal could be so tasty or so healthy. The past few nights, we’ve tried a few different dishes – modifying some of our standard favorites for the pressure cooker, and have been quite impressed with the results!

We made pasta on Monday night – sauted some bell peppers, artichoke hearts and garlic in a bit of olive oil, threw in the noodles, broth, sauce, locked down the lid, brought the cooker to pressure and voila – in 12 minutes we had dinner! No stirring, no watching the pot… just setting the timer and letting it roll.

Tonight we made a yummy rice, broccoli & chicken dish – add some teryaki sauce for flavor – and a full meal was ready in about 15 minutes.

The thing I love about this – everything we’ve used for these meals has been fresh or frozen. Nothing prepackaged, no preservatives (setting aside the teryaki sauce), and very very filling! Lots of veggies, lots of good healthy eats. I’m excited to try out new recipes and see what else this thing can do!
