The ramblings of a foodie…

As a self proclaimed “foodie“, always looking for new, delicious and healthful ways to enjoy cuisine, I’ve decided to dedicate a portion of my blog for recipes, food finds, facts, etc. It’s probably more of a repository for me, but I’ll have these categorized in the “cooking & food” section for easy searching… so, whilst others fill their blogs with “music” and “techie” posts, mine will be supplemented with the most fulfilling of all things… food and drink.

To preface the following recipe, I signed up for a subscription to hungry-girl.com a few months ago. The emails include recipes, food reviews and Q&A’s by hungry girl herself. It’s a health oriented site, big on finding more filling, lower calorie foods – to keep you satisfied without adding girth.

HG’s Veggie-rific Noodle-Free Lasagna

The recipe below was sent last week, and looks too good to pass up. It came in the form of a “Chew The Right Thing” comparison – putting regular lasagna and veggie lasagna side by side. I’ll only include the veggie version of the story, but if you want to see the whole write up, you can find it here.

HG’s Veggie-rific Noodle-Free Lasagna

Ingredients:
1 lb. (about 3 medium-sized) zucchini; ends removed and sliced lengthwise into wide, flat strips
1 large portabella mushroom; sliced into strips
1 large eggplant; ends removed and sliced lengthwise into wide, flat strips
15 oz. frozen chopped spinach; thawed, thoroughly drained and patted dry
16 oz. canned tomato sauce with garlic flavoring
1 cup frozen ground-beef-style soy crumbles
1 egg white
1 cup fat-free ricotta cheese
1/2 cup shredded fat-free mozzarella cheese
1 tbsp. reduced-fat Parmesan-style grated topping
1 tbsp. chopped basil
1/4 tsp. salt
pinch nutmeg

Directions:
Preheat oven to 425 degrees. Heat soy crumbles in the microwave for 30 seconds, and set aside. Set out a row of several paper towels (as you cook the veggies, transfer them to the paper towels to drain excess moisture). Spritz a large pan evenly with nonstick spray, and bring to high heat. Once hot, lay as many zucchini and mushroom slices as you can fit flat in the pan, and cook for about 2 minutes per side. Continue until all slices are cooked, removing the pan from heat and re-spraying it between batches. Cook eggplant slices for about 3 minutes per side, continuing to work in batches (removing and re-spraying pan each time). Next, in a large bowl, mix the spinach, egg white, ricotta cheese, basil, salt and nutmeg. Stir well and set aside. Spray a deep 8″ X 8″ pan with nonstick spray. Pour half (8 oz.) of the tomato sauce into the bottom of the pan. Then, layer half of the veggie slices on top in assorted order. Spread half of the spinach mixture on top. Next, sprinkle the soy crumbles evenly into the pan. Layer with remaining veggies, and then spread the rest of the spinach mixture on top. Cover with the remaining tomato sauce. Then, evenly top the lasagna with the mozzarella and grated cheese. Finally, bake uncovered for 30 minutes (or until the cheese on top starts to brown). Let cool, cut into 4 pieces, and dig in!

Serving Size: 1/4th of recipe (1 SUPER-LARGE portion)
Calories: 238 – Fat: 2g – Sodium: 1,218mg – Carbs: 33g – Fiber: 11g – Sugars: 14g – Protein: 25g – *4 Points!

Happy birthday to me!!

Today is my birthday. I’m now on the cusp of “late 20′s” (still not giving in to that one yet).

While going through some paperwork this morning, I came across my birth certificate – noticing that my mom was 26 when she had me. It’s a revolution to realize that you just passed the age when your parents had you. It was completely coincidental that I found my birth certificate, too. I was actually searching for a cd in my fire safe when I came across it. It’s random the way things work sometimes – almost like it’s beyond coincidence.

I’m spending most of the day studying & catching up on things – Ben made me breakfast this morning (Hungry Girl’s eggs benedict recipe – quite yummy!!), watched a cpa lecture, I packaged up my wedding dress and got it ready to be sent to the cleaners (we’re using wedclean), and am about to watch another cpa lecture… it should be a fairly leisurely day. Later, Ben & I are going to dinner… not sure where, it’s a surprise! :)

a good camera case gone bad…

I had a scary experience yesterday… searching for my ipod in my bag, I noticed that it was resting next to my camera case. Well, not so much resting as it was stuck to my camera case. It’s a very stylish little square case with houndstooth fabric and a magnetic front flap. This is how the case stays shut. It fits my camera perfectly and I have loved it dearly… until this moment. As I detached my ipod from the deathly magnetic grip of the camera case, my heart sunk. Is this the end of my ipod? Trying not to panic, I pushed the button to turn it on. I had housed these two components in my bag for the past year and never had an issue. But this time, I wasn’t so lucky. The ipod was non responsive. I held down the middle button, hopeful that some spark of life would occur. Still nothing. In one last effort, I hit the button combo to reset the ipod… and behold, life! So this was a good thing, my ipod was still functional. Unfortunately, the message that came up was not as good. It was a prompt to plug the ipod into my computer and reformat it. I’d lost everything.

I immediately took my camera from it’s case, placed it in an intermediary case, and tossed the oh so stylish houndstooth one that had wiped my ipod clean. Looks like I’ll be devoting some time into putting my playlists back together and syncing up to my computer. Oh yes, I’ll also be needing a new camera case.

8/18/07 Update: Magnet + IPOD = Bad things.

My ipod is officially dead. I thought it had just lost it’s contents, but in reality, the magnet fried the hard drive and the poor little thing can’t stand to wake up again. To make matters worse, none of my music was backed up on my computer. Ben & I just upgraded my computer, including reformatting the hard drive. I’d backed all of my music up on my ipod. When the above event occurred, I was certain that my music had been placed safely onto my newly upgraded machine, but alas, it appears that transfer never happened (I thought Ben did it, he thought I did it – and we never corroborated stories). It’s a sad thing, but luckily I still have most of my cds… I’ll just have to dust off the covers and pick out a select few to join me in the car.

One good thing out of all of this – Ben found a few places online that will upgrade your ipod hard drive for a pretty decent price – i.e., 100 gig hard drive for $250. This is all assuming that there aren’t other things in the unit that are broken, but it’s still a better option than keeping a pricey paper weight around.

Dreams

I know hearing about other people’s dreams isn’t the most exciting thing in the world, but this one was pretty monumental for me, so I want to document it.

I had a dream about my Grandpa Tom last night. He passed away about several years ago, when I was 13 or 14. Whenever I dream about someone in my life who’s passed on, I wonder if it’s their way of trying to communicate with me, or if it’s just my subconscious working something out. The logical part of me says that it’s the latter, but I’ll never fully believe it.

Here we go…

He stepped out of a white van onto a street corner busy with people. He was dressed in military clothing – it was old and frayed, but he wore it proudly. He seemed a bit disoriented, looking around as if he wasn’t sure what do to next. I took this as my cue. “Grandpa?”, I said, in disbelief. “Oh, hi.”, he replied. I went over to him and gave him a big hug. I wasn’t sure if he knew that he was dead or not, and I didn’t want to disrupt the natural order of things, I said nothing of this fact.

“How are you?”, I asked, not really sure what else to say at this point. “Good, good.” I’d never known him as a man of many words.

Immediately, I had the idea to capture his presence with a photo – so I could share it with my family. For some reason, I knew that I wouldn’t be able to call them while he was there, and a photo was the next best thing. I saw a friend on the street and asked if she had a camera – she said she did. As she searched for hers, I remembered that I had mine with me as well. We both found our cameras at the same time, and I asked if she would take a picture with mine – turning it on and preparing to hand it over. As I set the mode to “Auto”, I noticed several lights flashing on the camera that I’d never seen before. When I tried to take a picture, nothing happened. I changed the mode and tried again. Still nothing. My friend tried with her camera – the same thing happened to her. Something about his presence made our cameras not work. I found it odd, but decided not to spend anymore time on it and just enjoy the visit.

A part of the dream gets foggy here, but somehow we end up one of my company’s branch offices – a different location than where I work. I know a few of the people at the office, but am not completely sure where we are. We ask take a tour of the building.

We walked through the building, saying hello to people and making small talk. At one point, Grandpa Tom asked, “Can they see me?” I reply, “I think so. Then, you know that you’re…?” “Yes, I just wasn’t sure who was able to see me.”

Later on, still at my work, I ask, “Do you get to choose where you’ll go when you visit?”

“No, we have no idea where we’ll end up.”

We arrived back at the reception desk, and the other people who had joined our tour needed to take care of something before we could leave. My grandpa knew his time was short, and he had to get back to be picked up. He walked out of the building without saying goodbye. It took me a few seconds to realize he was gone. I stepped outside to see if I could find him. I spotted him among the crowd, about a hundred feet away. First, I yelled. “GRANDPA!!” He didn’t hear. Then, I started to run. At first it seemed like the distance between us wasn’t getting any shorter – his wide stride dwarfed my efforts. Then, he slowed down and I was able to catch up.

We walked in silence for a bit, then I asked “What’s heaven like?”

“You’re all alone. You don’t do anything or see anyone all day, except for meals.”

“So it’s sort of like a retirement home?”

“Yeah, exactly.”

“Huh.” (I found this odd, but didn’t remark beyond this)

We continued to walk, then I asked, “Do you see anyone else there? Family?”

“Only the people I eat meals with.”

“Did you know that Missy passed away?” At this point, I was speaking rather low, and he had a hard time hearing me. It was then that I noticed that he still wore hearing aids. I got closer to his ear and increased the volume of my voice. “Did you know that Missy passed away?” I said, perhaps too loudly, as I heard feedback coming from his hearing aid.**

“Yes, yes. I knew. I wasn’t all that surprised, actually.”

I stopped in my tracks and looked at him with bewilderment. “But, she was only 30.”

“She was under an incredible amount of stress. Too much.” This comment made me think of my own life – she and I were in the same profession, made many of the same life decisions. As I get closer to the age when she died, my own mortality becomes more and more apparent.**

We continued to walk down the path, hand in hand, until we arrived the same street corner from where he would depart. It was a tough goodbye. I asked if he had any messages he wanted to pass along to anyone else. He said he did, and pulled out a bill fold with numerous checks to different people, and a letter, which I assumed was to my grandma.

“Grandma misses you a lot. We all miss you.”, I said. Fighting back tears, he continued to flip through his billfold and find the items he wanted me to pass along.

At this point, my mind was racing with things I wanted to tell him, wanted to ask. I knew I had to choose wisely, as I only had a few more minutes with him. Finally, I asked, “Did you know I got married last October?” “Yes, I knew.” I didn’t ask how he knew, just took comfort in the fact that he did.

We said our goodbyes and parted ways. I watched him board the white van and drive away.

I woke up almost immediately after that. Although the time that passed seems short, it was an entire day in my dream. I know that’s not everything from the dream – there is dialogue I’ve left out, details I’ve missed, but that’s all I can get out of my head right now. I’ll revise it later as I remember more.

**For those of you who don’t know, Missy was a cousin I greatly admired who passed away unexpectedly in 2001, at the young age of 30. I’ve had numerous dreams where she’s come to “visit” me – some of them she knows she’s gone, others she has no idea… none of them have made it down on paper. It’s still too fresh, too soon, too hard. Maybe someday.

Hanging up the html hat

I swear, somewhere in this mess of a blog is an option to post from an email. However, I am not able to find it right now. Guess I’ll be posting this later tonight…

This past weekend was a late spring cleaning for the Parmeters. We got a lot accomplished, and I was mighty proud of our results at the end of the weekend (I helped in between my hours of studying – the housework was actually a welcome break!). Ben dropped off our every accumulating pile of Goodwill donations, recycled a few archaic computer monitors at the Intel recycle day and I cleaned the bathrooms while he was gone. Later, we cleaned the kitchen, tidied up the guest room & office, moved some things around in the garage to give Ben’s truck a parking spot… and even did some work in the backyard. While Ben worked on digging a spot for a new patio, I cleaned up the flower bed and pulled some weeds. There’s still a lot to do, but it’s really nice to see progress.

As mentioned previously, after determining that my website had become no more than a infrequently updated blog/photo gallery, I decided it was time to put away my html’ing hat and move into the world of pre-designed, pre-assembled blog/photo sites. While it isn’t as fabulous as maintaining my own blog & gallery, it’s also much less of a pain in the butt. Besides, wordpress.com offers all of the functionality I need (and used) on my old wordpress blog, plus I don’t have to worry about uploading php files or granting read/write access to the correct folders. I feel like I’ve spent a lot of time justifying my move over to the “pre-”everything world – but in reality, I’m really happy with my decision. I’m also loving the fact that WordPress.com allows a redirect for domains, and Suzyness.com should stay up and running!

In part with my website move, I’ve also been cleaning up my online photos… I’ve posted photos to numerous photo sites throughout the years, and never really found one I was all that fond of or sincerely devoted to. I’d tried to maintain my Yahoo! photo account, which I liked the best of all my options, but it was slow to upload, and the albums had a limit of 300 pics. That is, until recently… Yahoo! photo users are now being forced to migrate all of their photos over to a new photo account – the best option being Flickr, which offers 3 months of “Pro” service for free – meaning, no limits on uploads, no album limits, (nearly) no size limits. Flickr also allows for archiving and storage of full sized versions of photos – and maintaining the Pro service after the 3 months is up is only $25 a year. Considering we have 5 gigs of photos from our wedding alone, this is a pretty good deal for us! Ben & I have been considering ways to backup and store our photos – concerned that if our computers were ever stolen, flooded or fired, we’d lose our photos forever. We have backup DVDs that we keep in a fireproof box, but it’s still not failsafe; Flickr offers an excellent option for an offsite secondary backup (not to sell Ben’s Photo Gallery short – but no upload bandwith limit is key when uploading 4 mb pictures!). Now if only I could figure out how to post video to Flickr…

Right now I’m uploading pictures from our recent trip to Oregon over the 4th of July week. Lots of beautiful scenery and fun events during the week…

I’m off to bed – the gym awaits far too early in the morning.
